Together with the team from Radical Farm in Lavagna, Liguria, you’ll explore the philosophy of regenerative farming, techniques for food preservation, and the art of pasta-making.

Day 1: Fermentation & Food Preservation at Château de Raymontpierre

Master the art of fermentation and food preservation using fresh ingredients from the garden. Learn how to preserve food through fermenting, pickling, and curing while creating bold flavours.

What you will learn:

  • The basics of fermentation: brines, pickled vegetables, and probiotic foods.
  • Techniques for preserving seasonal ingredients.

Day 2: The History of Wheat & Pasta Workshop at Château de Raymontpierre

Travel through the history of wheat, one of the world’s oldest grains, and master the craft of handmade pasta.

What you will learn:

  • The cultural and historical significance of wheat and sustainability.
  • Traditional milling techniques and the use of whole-grain flours.
  • Pasta workshop: kneading, rolling, and shaping.
  • A shared feast of freshly prepared pasta.
